About
Dungarvan's flagship restaurant, opened by chef Paul Flynn and his wife Máire in 1997 in a converted leather tannery on Quay Street. Modern Irish cooking built on west Waterford produce, with an attached wine bar, townhouse, and cookery school. Note that 2026 is its final full year as a restaurant, with last service scheduled around the start of January 2027, after which it continues as a seasonal townhouse and cookery school.
